For each ticket sold, Triton will get a portion of the money for the school.

Sound will be lower than during a typical movie showing and low lighting will be on throughout the movie to assist students with sensory needs.  Rated PG.

Gluten Free Dairy Free Pancakes

Gluten Free Dairy Free Pancakes my kids love

I have been trying to make gluten free and dairy free pancakes my kids would eat for over a month now with little success.

I bought Almond Flour and The Gluten Free Almond Flour Cookbook written by Elana from Elanas Pantry.  I love the taste of the Almond Flour but the silver dollar size of the pancakes and the heaviness could not win over two picky kids.

To my dismay our soGluten Free Dairy Free Pancakesn kept requesting the Trader Joes pancakes which do not come close to an Almond Flour pancake nutrionally.

After weeks of tweaking the recipe I decided to try something different.  So this morning I got up and made one batch of Almond Flour pancakes from Elenas book and another batch using the Bisquick gluten free pancake and baking mix.  Before turning the griddle on I mixed the two batters together.

I was able to make large golden pancakes that were easy to flip, cooked all the way through with ease and my kids loved.

I’m happy that these pancakes will meet more of our sons nutritional needs than the boxed variety, especially as these are his lunch during the school week.

Gluten Free and Dairy Free Cooking

You may have noticed I haven’t blogged lately.  That’s because I’ve been a little busy learning how to bake gluten free and dairy free food for our son.  We are trying this diet as a possible treatment for his Autism.

There are a lot of foods commercially available at the grocery store, but unfortunately Hunter has a lot of sensory issues when it comes to food so he prefers the low nutrient options.  I was desperate to find some food that he would actually eat and would meet his daily needs.

What I discovered was that a lot of commercially available gluten free and dairy free food are made with rice flour, tapioca flour, potato flour, xanthum gum and corn flour.  Many of these foods are also egg and nut free which meant that his diet had little protein, was high in sugar and low in fiber.

As a busy mother who works full-time my hopes of a quick fix to keep me out of the the kitchen were dashed.  To my delight I found some wonderful options that are both delicious and highly nutritious. 

The first flour that sounded like something he would eat was Almond Flour.  I found these wonderful recipes at Elanas Pantry, which is a blog by Elana Amsterdam.  Elana uses very few ingredients in her high protein low sugar recipes.   After reading  through the Questions and Forums I decided to go for it and purchase her Gluten Free Almond Flour Cookbook and the Honeyville Almond Flour she recommends.  I’m very glad I did.  The kids have fallen in love with her Very Vanilla Cupcakes and after a little practice I’ve mastered the pancake recipe in her book.

In the last week or so I have been looking for recipes that use Coconut Flour as it is cheaper than Almond Flour and also very nutritious.  In my quest to save money I had no idea the many benefits of Coconut Oil and Coconut Flour.  I’ve only tried one Coconut Flour recipe so far and am looking forward to trying some more and gaining a better understanding of this ingredient.
